Nathan,

the insolent sommelier

Nathan, a natural wine enthusiast, developed his expertise by traveling through vineyards and working alongside some of the leading names in the industry.
Former sommelier at the restaurant Les Insolents in Uzès, he now sources gems and curiosities for La Cave Insolente. Wines that will take you off the beaten path.

The Manifesto1 of Sharing and Discovery.2 A humble philosophy 3 with a dash of daring4

It all began over a glass. One evening when the labels stayed hidden and sensations took over. We trusted… and we connected.
We are three kindred spirits from the worlds of fashion, design, and the confidential world of natural wines brought together by one conviction: the best moments are the ones you never see coming.

Time to be insolent.

Because discovery also means sharing, it's often about questions

and, of course, love at first sip

We would have preferred more poetic acronyms like Festive Ampelographic Quotidian or Fraternity, Amour, and Quips. But alas, they’re simply Frequently Asked Questions.

No. And thank goodness.

Each box is curated from our aging cellar, which evolves over time with new discoveries. The bottles vary with the seasons, arrivals, and, most importantly, the mood of the sommelier.

So, you won’t receive a copy-paste “standardized box,” but rather a unique experience, a mix of randomness and coherence. The goal isn’t to collect labels, but to savor a moment: an unexpected wine, an unplanned encounter.

And above all: in our cellar, every wine is ready to drink. We've waited for you, patiently, for each bottle to reach its peak. All you have to do is open it, without wondering if it's too early or too late.

That can happen. These are the bravest bottles,  hey fought hard to make it to you.

No worries, this doesn’t affect the quality of the wine in any way.

No need to build a medieval cellar or chant a druidic spell. Wine mostly loves simplicity: a cool place (12–18°C / 54–64°F), away from sunlight and major temperature swings.

In short: don’t stress. A bit of shade, a bit of coolness and it’ll be just fine.

Whenever you want.
That’s not a command, it’s a promise.

Every wine we include in the box has already waited patiently in our cellar. They’re ready. No need to consult the lunar calendar or have a master’s degree in oenology: you can uncork as soon as it arrives.

Of course, some wines may continue to evolve and surprise you in months or years to come. But wine is made to be drunk, shared, lived. An ordinary evening can turn into a celebration, a lunch can become a memory.

The right time is the one you choose.

In theory, yes.

You can write to him anytime: a question about a bottle, curiosity about a winemaker, or just to ask which wine to open with what… Nathan’s around, between two glasses, two boxes, or two bursts of laughter.

Sometimes he replies right away, sometimes a little later. But he always replies. Because here, wine isn’t anonymous: it’s a conversation, an exchange, a shared moment.

Because we’re not here to sell labels.

Wine isn’t a brand or a movie star. It’s a moment.
If we showed you all the bottles in advance, we’d break the magic.

The idea is for you to be surprised with every opening: discovering a winemaker you’ve never heard of, an unusual grape variety, or an unexpected region.

Most of our bottles are rare gems you can hardly find anywhere else these days ( That's the charm of keeping them waiting for you at La Cave ). Still, we always aim to keep our prices fair,  just like in a good specialty store.

And the surprise? That’s on the house !

Great question. And not so easy to answer.

In short, it’s wine made with grapes… and that’s it. No chemical additives, no cellar trickery, no industrial recipes. Just grapes, time, and care.
The result: living wines, wines that move, that tell a true story. Sometimes a bit wild, often incredibly precise, always sincere.

That’s why we love them, and why we let them rest in the cellar before sending them to you.
